Pretzel Crusted Pork Schnitzel with Fresh Lemon

1 cup(s) Bob's Red Mill All Natural Unmodified Potato Starch
5 large eggs, whisked
2 cup(s) gluten free pretzels, BBQ flavored
1 Lb ultra thin sliced pork
1/2 Tsp kosher salt
1/2 Tsp black pepper
2 Tbsp grapeseed oil
1 lemon, juiced

Set up 3 bowls for a breading station with potato starch in one, beaten eggs in the second, and crushed pretzels (processed to breadcrumb consistency) in the third.
Season pork with salt and pepper. Dredge each piece in potato starch, then egg and finally crushed pretzels. Set on a sheet pan while repeating the process until all the pork has been breaded.
Place a sauté pan on medium, add oil and heat until hot. Sear breaded pork in batches for about 1 minute per side or until breading is golden brown and crispy. Repeat until all the meat is cooked.
While still warm drizzle fresh lemon juice over the cooked pork and serve immediately. Season with more salt and pepper to taste.
