Recipe makes 4 Servings

6 medium golden or red beets, for larger beets add an additional 5 to 10 minutes cooking time
1/3 cup(s) Acetum Sweet Wine Vinegar of Modena
1 Tsp kosher salt

Instructions

Trim tops and wash any dirt off beets. Place beets into Instapot and add vinegar and salt.

Place cover on Instapot and seal. Set cook time for 30 minutes.

Follow directions on Instapot for releasing pressure, remove beets, wipe skin off of beets and place into a container. Refrigerate until ready to use.

Use roasted beets in a salad, or any other recipe calling for roasted beets.
