Power Greens and Avocado BLT Sandwich

Ingredients

Recipe makes 4 Servings

7 1/2 Oz H-E-B Fully Cooked Bacon
1/2 cup(s) olive oil
8 slices of loaf bakery sourdough bread
7 Oz mild chunky guacamole
1 large tomato, sliced
1 container (5 oz) power greens lettuce blend
1 Lb oven roasted turkey, sliced

Instructions

Heat a skillet over medium heat.

Wrap bacon in a single layer in paper towels and roll up. Cook in microwave for 30-45 seconds, just to crisp.

While skillet is heating up, brush olive oil on one side of each one of the 8 pieces of bread and toast oiled side of bread in skillet until lightly brown, but still soft. Lay toasted bread out on a cutting board, toasted side down.

Assemble 4 sandwiches by layering guacamole on four slices and then top with sliced tomato, power greens, turkey and bacon. Top with matched size of toasted bread.
