Port Wine Cranberry Glaze

Ingredients

Recipe makes 8 Servings

1/4 cup(s) shallot, finely chopped
1/2 cup(s) port wine
1/2 cup(s) chicken broth
1 small sprig of fresh rosemary
8 1/2 Oz Vela Farms Cranberry Jam
3 Tbsp salted butter, chilled and cubed
1 Tsp lime, juiced

Instructions

Place shallot, port wine, chicken broth and rosemary in a small saucepan.

Stir and bring to a simmer over medium heat. Cook for 12 to15 minutes, or until shallots are soft and translucent and volume of liquid is reduced by half.

Remove rosemary and add jam. Stir with a whisk to melt jam.

Allow mixture to simmer for 5 to 6 minutes, to thicken slightly. Whisk frequently to prevent burning.

While mixture is simmering, whisk in cold butter a little at a time to incorporate. When all butter has been added add lime juice and remove pan from heat.

Glaze can be brushed on turkey skin for last 15 minutes in the oven.

Also delicious on pork, chicken or salmon.
