Pork Tenderloin With Garlic-Cilantro Butter

12 H-E-B White Peeled Garlic
3/4 cup(s) H-E-B Extra Virgin Olive Oil, divided
1 1/2 Lb Pork Tenderloin Roast Natural, cut into 1-inch pieces and slightly flattened
1/4 cup(s) cilantro, chopped
3 Tbsp lime, juiced
1/8 Tsp H-E-B Black Pepper
4 Oz unsalted butter
2 Tbsp cilantro, chopped
1/8 Tsp kosher salt

Heat oven to 300°F.
Place garlic cloves in small baking dish and cover with 1/4 cup oil and cook for 45 minutes, until garlic is soft.
Reserve 3 roasted garlic cloves to make compund butter.
Combine roasted garlic cloves, 1/2 cup olive oil, cilantro, lime juice and pepper in glass bowl.
Place pork in mixture and marinate four hours in refrigerator.
Remove pork from marinade and pan broil in heavy skillet over medium-high heat for 2-3 minutes per side, or until no pink remains in center of pork.
In food processor combine butter, cilantro, reserved garlic, and salt. Serve over tenderloin while hot.
