Ingredients

Recipe makes 6 Servings

1 personal watermelon, skin removed and cut into thin slices
1 bunch fresh mint, finely chopped
1 bunch fresh basil, finely chopped
1 lime, juiced
1 navel orange, juiced
1 natural pork tenderloin, cut into 1" slices and pressed thin
1 Tsp Adams Reserve Chipotle Five Spice Rub, as needed for seasoning pork
1 package of pretzel buns
1 H-E-B Pepper Toppers Aji Peruvian Yellow Pepper, as needed for topping pork

Instructions

In a large bowl, combine watermelon slices with mint, basil, lime and orange juice. Toss to coat, being careful not to break watermelon. Refrigerate at least 30 to 45 minutes allowing flavors to meld. (Overnight is best.)

Preheat grill to 350 - 400ºF or medium-high heat.

Season pork slices liberally with spice rub on both sides. Grill 2 to 5 minutes per side, depending on thickness, or until internal temperature reaches 155ºF. Remove and rest for 10 minutes.

Assemble burgers by adding watermelon to bottom of bun, followed by pork, then pepper toppers. Serve with your favorite condiments or toppings like lettuce, tomato, onions or pickles!
