Pork Chops with Caramelized Shallots and Apples

2 bone in pork chops
1 Tbsp olive oil
1 Tsp kosher salt
1 Tsp black pepper
1 cup(s) shallots, sliced
2 Jazz apples, thinly sliced
1 cup(s) Four J Sherry Shallot Vinaigrette

Instructions

Place a large cast iron pan over medium-high heat.

Brush both sides of pork chops with olive oil and season with salt and pepper.

Place chops in hot skillet and sear approximately 6 to 7 minutes per side. Remove from pan and set aside.

In the same pan, add shallots and sliced apples. Cook several minutes or until shallots are well caramelized and apples are tender.

Shake bottle of vinaigrette thoroughly then pour about 1 cup into skillet. Bring to a simmer for 3 or 4 minutes.

Return pork chops to pan and cook in sauce an additional 5 minutes, adjusting heat as needed.

Serve over mashed potatoes.
