Pork and Pineapple Skewers

Ingredients

Recipe makes 6 Servings

1 Lb lean pork loin, cut into 2 inch pieces
1 pineapple
2 red bell peppers, cut into 2 inch pieces
1 medium red onion, cut into 2 inch pieces
1/4 cup(s) orange juice
1 Tsp Central Market Green Ancho Chili Seasoning
1 Tbsp olive oil

Instructions

Preheat grill to medium heat.

Soak wooden skewers in water.

Peel and core pineapple, reserving any juice if possible, and cut into 2 inch chunks.

Skewer pork, pineapple, onion, and bell pepper in an alternating pattern. Continue until all meat and veggies have been used.

Place skewers into a 9 x 13 baking dish.

Mix together pineapple juice, orange juice, ancho chili seasoning and olive oil.

Marinate for 30 minutes in refrigerator, flipping once.

Grill skewers for about 7 to 8 minutes per side, or until desired doneness is reached. Serve immediately.
