Pizza Stuffed Turkey Roll Ups

Recipe makes 5 Servings

1 1/4 Lb thinly sliced turkey cutlets
1/4 Tsp black pepper
1 Tsp garlic powder
10 H-E-B Turkey Pepperoni Slices
2 portabello mushroom, gills removed and sliced thinly
2/3 cup(s) part-skim mozzarella
2 cup(s) Red Spoon Crushed Tomatoes with Garlic
1/2 cup(s) red onion, diced
1/2 cup(s) green bell pepper, diced
1/2 Tsp crushed red pepper flakes, optional

Preheat oven to 400ºF.
Line a baking sheet with foil, set aside.
Lay each turkey cutlet out onto a cutting board and season with pepper and garlic powder.
Top each cutlet with 3 slices of pepperoni, a few mushroom slices, 1 tablespoon of mozzarella, and 1 tablespoon tomato sauce. Roll and place seem side down onto baking sheet.
Place cutlets in oven and bake 20 minutes, then remove pan.
Top each roll with additional tomato sauce, cheese, red onions, bell peppers and crushed red pepper flakes, if desired. Return to oven and bake until cheese is melted. Remove and serve immediately.
Toppings can be changed to imitate your favorite pizza toppings, like olives or pineapple.
