Recipe makes 8 Servings

1 cup(s) red wine vinegar
1 cup(s) water
1 1/2 Tbsp kosher salt
1 Tbsp sugar
1 Tbsp black peppercorns
2 bay leaves
1 small lime, peel only
1 large red onion, very thinly sliced (a mandolin works best)

In a small stainless steel pot, add red wine vinegar, water, salt, sugar, peppercorns, bay leaves and lime peelings. Bring to a simmer then remove from heat.
Strain liquid into a bowl, removing all solids. Allow to sit 10 minutes.
Place onions in a container with a tight fitting lid and pour brine over onions. Cover and refrigerate for at least an hour.
Use for garnish on everything from BBQ to burgers or even eggs.
