Recipe makes 10 Servings

2 cup(s) white vinegar
1 1/2 cup(s) water
2 Tbsp kosher salt
2 Tbsp sugar
3 cloves garlic, crushed
1 Tbsp whole peppercorn
2 bunches radishes, tops removed

Wash radishes well, removing any visible dirt. Slice thinly.
Combine all ingredients except radishes in a saucepan and bring to a boil. Remove from heat and allow to cool.
Place in a large mason jar then cover radishes completely with cooled brine and seal with lid.
Chill at least 2 hours or 24 hours for best results.
Serve pickled radishes with charcuterie plates, pork carnita tacos, BBQ brisket sandwiches or eat as a snack.
