Recipe makes 4 Servings

2 large eggs
13 1/2 Oz coconut milk
1/4 cup(s) dark brown sugar
1/3 cup(s) all purpose baking mix
1/2 Tsp cinnamon
1 can pineapple slices in juice, reserve juice and drain pineapple slices
1 Tsp rum extract
4 Tbsp salted butter

In a large bowl whisk eggs, coconut milk, brown sugar, baking mix, cinnamon, pineapple juice and rum extract.
Heat a skillet over medium heat add 1 tablespoon butter for each slice and swirl to coat pan. Cook in several batches since bread is large.
Gently soak a slice of bread in coconut mixture and add to pan. Add pineapple slices to skillet alongside bread. Cook until bread in golden brown on first side then flip over.
Place pineapple slices on bread and continue to cook bread on the second side, gently pressing pineapple into French toast.
When second side of bread is nicely browned remove from pan and serve with butter and syrup if desired. Repeat with remaining slices of bread.
