Pesto Bacon Potato Salad

Recipe makes 6 Servings

28 Oz Bite-Sized Potato Medley, (microwaveable bag)
5 slices bacon, finely chopped
3 Tbsp H-E-B Basil Pesto
1/4 cup(s) mayonnaise
2 Tsp fresh lemon juice
1/4 cup(s) green onions, finely diced
1/2 Pt Angel Sweet Tomatoes, halved

Instructions

Microwave potatoes in bag for 3 1/2 minutes for each bag. Allow to sit while preparing the rest of the ingredients.

While potatoes are cooking, place chopped bacon in a large skillet over medium high-heat and cook till crispy. Remove from heat and set aside.

In a small bowl stir together pesto, mayonnaise and lemon.

Empty potatoes into a large bowl. Add bacon (include drippings) and pesto sauce. Stir well to coat and season to taste with salt and pepper.

Stir through green onions and tomatoes. just before serving.

Chef's note: Can be served warm or chilled. Garnish with additional bacon and chopped fresh basil if desired.
