Penne and Grilled Zucchini with Avocado Cream

Recipe makes 6 Servings

12 Oz whole wheat penne pasta
2 zucchini, quartered lengthwise and cut into 1 inch chunks.
3 garlic cloves, chopped
1 jalapeno pepper, seeds removed
1/2 cilantro bunch
1 Large Hass avocado, peeled and pitted
1 Tbsp butter
1 Tbsp all-purpose flour
1 cup(s) 2% milk
1/2 cup(s) H-E-B Monterey Jack Fancy Shredded Cheese

Cook pasta according to package directions. Drain and set aside.
Heat grill to high heat (or preheat oven to 400ºF).
Spray zucchini lightly with non-stick cooking spray and grill until char marks appear, about 2 minutes per side. Remove from grill and set aside.
In a blender or food processor, combine garlic, jalapeño, cilantro and avocado. Blend until smooth (add a tablespoon or so of water, if too thick). Set aside.
In small saucepan over medium heat, melt butter then add in flour. Stir constantly until mixture looks like wet sand.
Whisk in milk and cheese. Continue to whisk until cheese is melted and sauce is smooth and slightly thickened.
In a large bowl combine all ingredients and toss well. Serve immediately.
