Pecan Crusted Trout with Apricot Chipotle Sauce

Recipe makes 4 Servings

1/2 cup(s) all purpose flour
1 cup(s) pecan halves
2 Tbsp pure cane sugar
1 large egg, beaten
4 rainbow trout fillets
1 cup(s) Bronco Bob Apricot Chipotle Sauce

Heat oven to 425°F.
Spray a foil-lined baking pan with non-stick cooking spray.
Blend flour, pecans and sugar in a shallow bowl.
Dip each fillet in egg, then press into pecan flour mixture.
Place fillets on prepared baking sheet, and bake 10 minutes per inch of thickness until it flakes easily in the center.
Top with apricot chipotle sauce and serve.
