Pecan-Crusted Pork Chops

Recipe makes 4 Servings

2 Tbsp Dijon mustard
2 Tbsp mayonnaise
1 Tbsp vegetable oil
1/2 cup(s) pecans, chopped
1 H-E-B Bake Shop 7 Grain Bread, torn into pieces
4 fresh parsley
1 Tbsp parsley flakes
1/2 Tsp kosher salt
1 Lb boneless center loin pork chops, cut 3/4-inch thick

Heat oven to 425°F.
Combine mustard, mayonnaise and oil in a shallow bowl.
Blend pecans, bread, parsley, parsley flakes and salt on high speed in food processor, pulsing on and off until pecans are finely chopped; pour onto a plate.
Spread a thin layer of mustard mixture over pork chops, then coat evenly with pecan mixture; place chops on a foil-lined baking sheet.
Bake in upper third of oven 15-20 minutes.
