Peanut Butter Chocolate Crunchies

Recipe makes 12 Servings

2 Tbsp H-E-B Organics Coconut Oil, divided use
3 Tbsp H-E-B Organics Chunky Peanut Butter
12 Oz marshmallows
1 Tsp vanilla extract
8 cup(s) crispy rice cereal
15 Oz H-E-B Organics Bitter-Sweet Chocolate Mini Baking Chips

Preheat oven to 325ºF. Use about 1 teaspoon of coconut oil to evenly coat a 9 X 13-inch pan.
Add remaining coconut oil, peanut butter and marshmallows to a large microwaveable bowl. Cook on full power for 1 minute, stir, and microwave for 1 more minute.
Stir in vanilla and cereal, toss to coat then press firmly into prepared pan.
Scatter chocolate chips evenly across top of cereal. Place in oven for 5 to 7 minutes, or just long enough to soften chocolate.
Using a knife or spatula, spread chocolate evenly across top of cereal. Allow to cool before slicing into bars.
