Recipe makes 8 Servings

1 cup(s) bacon, diced
1 cup(s) white onion. diced
1/2 cup(s) carrots, diced
2 Tbsp garlic, minced
2 cans cannellini beans, rinsed & drained
1 can crushed tomatoes
6 cup(s) veggie stock
1 Tbsp fresh rosemary, chopped
1 Tsp kosher salt
1 bag (17.6 oz) Central Market Vesuvio Pasta

Set a large pot on medium heat, add bacon and stir-fry 5-6 minutes.
Add onions, carrots and garlic. Continue to stir-fry until bacon is just crispy and veggies have some color.
Add cannellini beans, stir to soak up some of the bacon fat, and cook 2-3 minutes.
Stir in crushed tomatoes, veggie stock, rosemary and salt. Bring to a simmer and cook 20 minutes.
Meanwhile, cook pasta according to package instructions, drain and set aside.
To serve: top cooked pasta with some of the bean sauce. Season to taste and enjoy.
