Panzanella Bread Salad

Recipe makes 8 Servings

1 French Bread, at least a day old
2 roma tomato, sliced thin
2 small red onions, sliced thin
1 cucumber, sliced thin
1/2 cup(s) basil, chopped or torn
1 Tbsp extra virgin olive oil
1 Tbsp H-E-B Reggiano Bread dipper
1 Tsp red wine vinegar

Cut bread into slices and soak in cold water for a couple of minutes.
Once the bread is heavy with water, remove a little bread at a time and squeeze out excess water using your hands. Break it apart into small, dry crumbs and place in a salad bowl.
Add tomatoes, cucumbers, and sliced onion and basil leaves to the bowl.
Dress the salad with oil, and H-E-B Reggiano bread dippers seasoning. Place it in the refrigerator.
When it is time to serve, add a splash of wine vinegar.
