Instructions

1
Set up 3 bowls for a breading station with flour in one, beaten eggs in the second, and panko bread crumbs in the third.
2
Season turkey with salt and pepper. Dredge each piece in flour (shake off excess) then egg and panko bread crumbs. Set on a sheet pan while repeating the process until all the turkey has been breaded.
3
Place a sauté pan on medium heat, add oil and heat until hot. Sear breaded turkey in batches for about 2-3 minutes per side or until breading is golden brown and crispy. Repeat until all the turkey is cooked.
4
Remove turkey from pan, and place over low heat. Deglaze pan with lemon juice and add capers, sauté for 2 minutes just to release all the brown bits leftover from the turkey. Turn off heat and pour the hot sauce over turkey cutlets. Season to taste.
