1/3 cup(s) fresh parsley, finely chopped
3 Tbsp H-E-B Extra Virgin Olive Oil
4 garlic, minced
2 Tbsp lemon, zest
1/2 Tbsp lemon, juice
1/4 Tsp H-E-B Iodized Salt
1/4 Tsp H-E-B Black Pepper
4 Alaska Sole fillets, fresh, thawed or frozen
1 Lb asparagus, trimmed

Instructions

Preheat oven to 450°F.

In a small bowl, mix parsley, oil, garlic, salt, pepper, lemon zest and juice; set aside.

Place asparagus into spray-coated 9x13 inch ovenproof dish.

Spoon 2/3 of parsley mixture onto asparagus.

Rinse any ice glaze from frozen fillets under cold water; pat dry with paper towel.

Place fillets on top of asparagus. Sprinkle cod with remaining parsley mixture.

Roast, uncovered, 15-20 minutes for frozen fillets or 10-15 minutes for fresh/thawed fish.

Cook just until fish is opaque throughout or 140°F internal temperature.
