Orecchiette with Tomatoes, Basil and Cacioricotta Cheese

Recipe makes 6 Servings

3 1/2 cup(s) cherry tomatoes, quartered
1/4 cup(s) white onion, diced
1 garlic, crushed
1/2 basil, chopped
2 1/2 Tbsp H-E-B Extra Virgin Olive Oil
16 Oz orecchiette pasta
3/4 cup(s) Boars Head Pecorino Romano Grated Cheese

In a large sauce pan, combine tomatoes, onions, garlic, half of basil and 2 1/2 tablespoons olive oil. Cook on moderate to low heat about 20 to 30 minutes.
Meanwhile, bring a large pot of water to a boil and add pasta and cook according to package directions. Strain.
Pour sauce through mesh sieve and keep it hot.
Serve with cheese, basil and cooked orecchiette pasta.
