One Pot Spicy Mexican Lentils and Quinoa

Recipe makes 6 Servings

2 Tbsp olive oil
1 cup(s) onion, diced
1 jalapeño, seeded and diced
1 Tbsp garlic, minced
1/2 cup(s) quinoa
1/2 cup(s) green lentils
1 Pt cherry tomatoes
15 1/2 Oz can no salt black beans, rinsed and drained
1 cup(s) frozen corn
3 cup(s) Cookwell & Co. Two Step Chili Mix, or 1 packet of dry chili mix plus 3 cups of water
6 Tbsp Dip It! Cilantro Gourmet Yogurt Dip

Place oil in a large skillet over medium-heat. Add in onions, jalapeños, and garlic. Cook several minutes until onions are translucent, then add in quinoa, lentils and tomatoes.
Cook for a couple minutes stirring constantly then add in beans, corn and Two Step Chili mix plus 1 cup of water. Bring to a boil then reduce to a simmer and cover for 30 minutes.
Serve with cilantro yogurt dip!
