Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
1 Lb extra lean ground turkey
2 Tbsp garlic, minced
2 cup(s) spinach, chopped
16 Oz tomato sauce
1 Tsp dried oregano
1 Tsp dried thyme
1 Tsp dried basil
2 cup(s) dried whole wheat macaroni pasta
1/2 cup(s) pepperoni, diced
1/2 cup(s) 2% mozzarella cheese

Instructions

In a large skillet heat olive oil over medium high heat. Add in ground turkey. Cook for 3 to 4 minutes then add in garlic. Cook for several more minutes stirring frequently.

Add in spinach and cook for an additional 2 to 3 minutes.

Add in tomato sauce and herbs. Stir to combine.

Add in pasta and a 1/2 cup of water. Stir to coat. Bring mixture to simmer.

Add in chopped pepperoni and cheese. Cover with a lid and reduce heat to a low simmer. Cook until pasta is tender.

Remove lid and serve immediately.
