Recipe makes 6 Servings

1 Tbsp olive oil
1 Lb boneless, skinless chicken thighs
1 H-E-B Spinach & Mushrooms Breakfast Starter
1 cup(s) H-E-B Select Ingredients Reduced Sodium Chicken Broth
8 Oz H-E-B Elbow Macaroni
16 Oz Cookwell & Company Tortilla Soup

Heat olive oil in large, heavy bottom pot and add olive oil.
Brown thighs 5 to 7 minutes and set aside.
Add contents of breakfast starter container (not plastic bags) to pot and sauté until onions are soft.
Add broth, pasta and soup and cook 15 minutes then, add cream and bring back to a light simmer.
Chop chicken and add to pot with spinach, tomato and cheese packet. Stir and cook 3 to 5 additional minutes. Season to taste with salt and pepper before serving.
Garnish with additional Monterey Jack cheese and green onion if desired.
