One Pan Chicken and Spinach Sauté

Recipe makes 2 Servings

10 Oz chicken breast, cut into 1 inch chunks
1 Tbsp Bolners Fiesta Salt Free Fajita Seasoning
1 cup(s) onion, sliced
1 Tbsp garlic, minced
1/2 cup(s) Sweet Vermouth
4 cup(s) baby spinach
1 cup(s) Central Market Quick Cook Grains Bulgur & Red Quinoa, prepared according to package directions

Sprinkle chicken on both sides with seasoning.
Heat a large non-stick skillet over medium high heat.
Lightly spray with non-stick spray and add the chicken.
Cook chicken for several minutes, toss frequently until well browned.
Add in onions, and garlic. Continue to cook until onions are tender, then add in the vermouth.
Bring to a low simmer and let the liquid reduce by half. Then add in spinach.
Remove pan from heat and toss until spinach is wilted.
Heat grains according to package directions.
Divide them evenly among two bowls then top with spinach chicken mixture.
Serve immediately.
