Recipe makes 6 Servings

12 Oz Cod Fillets
1 Tsp Hill Country Fare Fajita Seasoning Blend
1 cup(s) red onion, chopped
1/2 cup(s) celery, chopped
2 cup(s) tomato, chopped
1 jalapeno pepper, thin sliced
2 lime, juiced
4 Tbsp cilantro, chopped
1 Tbsp H-E-B Extra Virgin Olive Oil

Cut cod fillets into 1/2-inch pieces and place in a microwave-safe dish.
Season with 1/2 teaspoon fajita seasoning. Reserve remaining fajita seasoning.
Cover dish with plastic wrap and microwave on high power for 3 minutes or until cod is flaky. Drain, then cool for 15 minutes.
Combine drained cod, onion, celery, tomatoes, jalapeños, lime juice, cilantro, remaining fajita seasoning and olive oil in a large bowl and toss.
Serve ceviche with chips or over salad greens.
