Mustard-Crusted Pork Roast

2 Lb Natural Center Cut Pork Loin Roast
1 Tsp kosher salt
1 Tsp Adams Coarse Black Pepper
1/2 Tsp Central Market Organics Thyme
1 cup(s) H-E-B Onion and Garlic Restaurant Style Premium Croutons, crushed
2 Tbsp H-E-B Dijon Mustard

Instructions

Heat oven to 350ºF.

Rub pork with salt, pepper and thyme. Place fat side down in a sauté pan over high heat and sear 2-3 minutes to develop a slight crust.

Remove pork to an oven safe shallow dish and roast 30 minutes.

Remove roast from oven. Spread or brush mustard over surface of roast. Sprinkle with crushed croutons and press to adhere to top and sides of roast.

Return to oven and roast 20 to 40 minutes longer, until a thermometer inserted in the center reads 150ºF.

Remove from oven and allow roast to rest 10 minutes. Slice thinly and serve.
