Mustard-Baked Pork Chops With Brie

1/3 cup(s) H-E-B Bakers Scoop Unbleached All Purpose Flour
1/2 Tsp kosher salt
1/4 Tsp Dion Coriander Ground
1/4 Tsp H-E-B Black Pepper
4 Center Cut Pork Chop, about 1-inch thick
2 Tbsp H-E-B Dijon Mustard
2 Tsp H-E-B Extra Virgin Olive Oil
4 1/2 Oz H-E-B Double Creme Brie
1/2 cup(s) Hill Country Fare Italian Bread Crumbs
2 Tbsp parsley, chopped
2 Tbsp H-E-B Unsalted Butter, melted
2 H-E-B White Peeled Garlic, crushed
1/4 Tsp thyme, crushed

Heat oven to 425°F.
In a shallow bowl, mix together flour, salt, coriander and pepper.
Evenly coat both sides of each chop with mustard, then coat with flour mixture.
In a large skillet, heat oil over medium-high heat. Brown chops on each side for 2 minutes; place chops in a shallow baking dish.
Cut each piece of Brie in half to form a thin half-circle.
In a small bowl combine breadcrumbs, parsley, butter, garlic and thyme.
Roast uncovered for 10 minutes, then top chops with cheese and breadcrumb mixture.
Place back in the oven for an additional 5-10 minutes, until cheese melts and breadcrumbs brown.
