Mussels in White Wine

Recipe makes 4 Servings

3 Tbsp salted butter
3 shallots, finely diced
2 Tbsp garlic cloves, chopped
24 Oz Fish Market Cooked Black Mussels, scrubbed & de-bearded
1/2 cup(s) dry white wine
1 cup(s) cherry tomatoes, halved
1 Tsp fresh thyme, chopped
1 lemon, zested & juiced
4 Tbsp curly leaf parsley, chopped

In a large saute pan with a lid, melt butter over medium-high heat.
Add shallots and garlic, and cook until shallots are tender.
Turn heat to high and add mussels and remaining ingredients. Stir quickly then cover.
Cook 5 to 7 minutes or until mussels open (discard those that don't).
Serve immediately in a large bowl with crusty bread.
