1 1/2 Lb fresh mussels
8 Oz Central Market Mafaldine IGP Pasta di Gragnano
1 Tsp kosher salt
3 Tbsp olive oil
1/3 cup(s) shallots, finely chopped
1 Tsp garlic, finely crushed
2 Pt H-E-B Select Sweet Tomatoes, halved
1/2 cup(s) dry white wine, such as Pinot Grigio or Sauvignon Blanc
2 Tbsp salted butter
3 Oz Pecorino cheese, finely grated
3 large sprigs fresh basil, freshly torn

Instructions

Rinse mussels under cool, clear running water. Discard any that do not close completely when rinsed.

Bring a large pot of water to a boil. Cook pasta according to package directions. Drain pasta, reserving 1/2 cup cooking water. Transfer to a large serving bowl. Drizzle with reserved water and cover to keep warm.

Meanwhile, heat oil in a large skillet over medium-high heat. Add shallots and garlic, stir and cook to soften about 1 minute.

Add tomatoes and cook another 2 to 3 minutes to soften tomatoes. Add wine, butter and mussels. Turn heat down to medium.

Stir and cover tightly with a lid. Allow mussels to cook 5 to 6 minutes, or until mussels open up. Discard any that do not open during cooking.

Add pasta to cooked mussels and stir to coat with pan sauces. Divide among serving bowls.
