Ingredients

Recipe makes 4 Servings

1 Tbsp canola oil
2 poblano peppers, halved, seeded and sliced thin
1 red onion, sliced thin
1 1/2 cup(s) mushrooms, sliced
1 Tsp cumin
1/2 Tsp chili pepper
4 H-E-B Mixla Corn and Flour Blend Tortillas
1 bunch of cilantro, roughly chopped
1/3 cup(s) queso asadero

Instructions

Add in one tablespoon of canola oil to a large skillet, and heat over medium-high flame.

To the skillet add in peppers, onions, and mushrooms.

Sauté mushrooms until thoroughly browned and onions are translucent. Mix in cumin and chili powder.

Remove vegetable mixture to a large bowl.

In same skillet add tortillas; allow them to drape over the side of pan to fit.

Divide filling into 4 equal portions and place on one side of the tortilla, top with cheese.

Fold the tortilla over the side that has filling. Let it warm for 1 minute, then carefully flip the taco.

NOTE: Tortillas can be cooked in batches to fit in the skillet.
