Ingredients

Recipe makes 5 Servings

3 large eggs, beaten, for egg wash
1/2 Tsp kosher salt
2 cup(s) panko bread crumbs, plain
12 Oz mozzarella fresca, medallions, or fresh whole milk mozzarella
1/4 cup(s) Byers' Best Candied Jalapeños, chopped
2 Tbsp Garden Lightly Dried Basil
2 Tbsp Fini Balsamic Reduction

Instructions

Whisk eggs together with salt in a bowl. Place bread crumbs in another bowl.

Separate disks of mozzarella (or cut up whole into 1/4 inch thick slices.) Lay out on a paper towel and blot to remove excess moisture.

Place jalapeños and herbs evenly on the surface of half of the mozzarella disks. Top with plain slices of mozzarella to "sandwich" fillings in between slices of cheese.

Dip cheese stacks into beaten egg and then press into bread crumbs. Refrigerate for 10 to 20 minutes to set egg and crumb mixture onto cheese surface.

Preheat waffle iron. Remove breaded cheese from refrigerator. Spray waffle iron with a few short bursts of spray oil and place cheese discs in the center of each section. Close waffle iron and cook for 4 to 5 minutes, or until sensor light comes on.

Open waffle iron slowly to make sure cheese is crispy and brown. Remove carefully and drizzle with balsamic reduction.
