1 cup(s) H-E-B Restaurant Style Seasoned Croutons
2 Tbsp Hill Country Fare Canola Oil
1/2 cup(s) H-E-B frozen Fajita Blend Vegetables, chopped
2 Lb H-E-B Lean Ground Beef
2 Tsp H-E-B Texas Spice Co. Beef Fajita Seasoning
1/4 cup(s) cilantro, chopped
2 large H-E-B Large Grade AA Eggs
1/2 cup(s) H-E-B Ketchup

Heat oven to 400°F.
Spray a 1 1/2-quart loaf pan with nonstick cooking spray and set aside.
Place croutons in food processor, process to coarse crumbs, and set aside.
Heat a large skillet on high heat for 2 minutes.
Add canola oil and chopped vegetables and stir-fry until crisp brown on edges (about 3 minutes). Remove from heat.
Quickly combine crushed croutons, fried vegetable mixture, ground beef, fajita seasoning, cilantro, and eggs in a bowl.
Press the mixture into prepared loaf pan.
Bake for 45 minutes or until a quick-response thermometer reads 160°F.
Pour off excess fat and cool for 10 minutes.
Top meat loaf with ketchup and enjoy a great meal.
