14 Oz Kodiak Cakes Muffin Mix Blueberry Lemon
1/2 cup(s) whole milk
1/4 cup(s) vegetable oil
3 cup(s) plain Greek yogurt, divided use
2 large eggs
3 lemons, divided use, 1 zested and 3 juiced
4 Tbsp Sola Low Calorie Sweetener, divided use
1 Pt blueberries
2 cup(s) strawberries, sliced

Preheat oven to 375°F and grease a quarter sheet tray with non-stick cooking spray.

In a large bowl combine muffin mix, milk, vegetable oil, 1 cup of yogurt, eggs and the zest of 1 lemon. Stir to combine but some lumps are okay.

Pour mixture into prepared baking sheet and sprinkle with 1 tablespoon of sweetener. Bake 20 minutes or until a toothpick inserted in center comes out clean.

Meanwhile, in a large saucepan over medium-high heat, combine lemon juice, blueberries and remaining sweetener.

Sauté about 5 minutes or until blueberries darken and start to give off their juices; remove from heat.

Place sheet pan in fridge/freezer 10 to 15 minutes to chill muffin cake before slicing into 1-inch squares.

To build parfait, layer yogurt, blueberries, sliced strawberries and blueberry muffin cake squares in a bowl or short glass. Finish with more yogurt and lemon zest if desired.
