Minty Snow Peas

Recipe makes 5 Servings

1/4 cup(s) pine nuts
1 Tbsp salted butter
1 Tbsp water
12 Oz snow peas, stems trimmed
1 Tsp fresh garlic, finely minced
1 Tbsp Vela Farms Mint Jelly
1/4 Tsp kosher salt

Heat a medium sized skillet on medium. Add pine nuts, stir and toast until lightly brown (be careful not to burn). Remove from pan and set aside. Carefully wipe out pan with tongs and a dry paper towel.
Increase heat to medium high. Add butter and water. When butter melts, add peas and garlic. Sauté 4 to 6 minutes or just until peas are tender/firm (most of water should have evaporated).
Add mint jelly and salt, stirring thoroughly so jelly melts completely. Serve immediately.
