Ingredients

Recipe makes 6 Servings

1/4 cup(s) extra virgin olive oil
1/2 cup(s) white onion, diced small
1 Tbsp fresh garlic, minced or zested
16 Oz Cece's Veggie Noodle Co. Riced Cauliflower
2 Tbsp tomato paste
1 Tsp cumin
1/2 cup(s) H-E-B Organics Veggie Stock or Broth
1/3 cup(s) fresh cilantro, chopped fine

Instructions

Place a non-stick sauté pan over medium-heat. Add oil and allow to get hot before adding onions and garlic.

Sweat onions and garlic for 3 to 4 minutes, then add cauliflower rice, tomato paste and cumin. Stir fry everything to combine before adding stock.

Add stock and cook until stock is completely evaporated. Season to taste as needed and garnish with fresh chopped cilantro.
