Recipe makes 8 Servings

1 cup(s) H-E-B Organic Super Grain Blend
1 medium hot house cucumber, peeled, seeded and diced
1 Pt Angel Sweet Tomatoes, quartered
15 Oz organic garbanzo beans, drained and rinsed
10 kalamata olives, chopped
1/2 cup(s) crumbled feta cheese
1/2 cup(s) H-E-B Organics Italian Dressing
1 Tbsp fresh lemon zest, finely grated
1/4 cup(s) Italian flat leaf parsley, finely chopped

Cook grain blend according to package directions.
Drain excess liquid and spread on a large baking sheet in a thin layer.
Refrigerate grains to cool while preparing the rest of the ingredients. Chill grains for 30 minutes, or until completely cooled.
Add cucumber, tomatoes, beans, olives and feta to a large bowl. Add chilled grains, then toss with dressing, lemon zest and parsley.
