Recipe makes 4 Servings

1 Tbsp olive oil spray
4 portobello mushrooms, stems removed
4 Tbsp traditional hummus
1 cup(s) roasted red peppers
1 cup(s) artichokes, drained and quartered
1/2 cup(s) red onions, chopped
1/4 cup(s) Kalamata olives, chopped
3 cup(s) spinach, chopped
1/4 cup(s) feta crumble
2 Tsp garlic, chopped

Instructions

Preheat oven to 375°F.

Lightly spray a rimmed baking sheet or dish with nonstick spray.

Place mushrooms stem side up in baking dish.

Spread 1 tablespoon hummus inside each cap.

In a large bowl combine remaining ingredients and spoon into the portobello caps.

Bake 30 minutes.
