Recipe makes 2 Servings

1 Tbsp olive oil
8 Oz natural ground beef
7 .0500 Oz cauli rice, Mediterranean flavor
6 Oz H-E-B Pico de Gallo
10 kalamata olives, quartered
2 medium red bell peppers
3 Oz feta cheese, crumbled

Preheat oven to 375°F.
Heat a sauce pan over medium high heat. Add oil and beef to pan. Stir and cook until beef is thoroughly cooked and well browned, about 8 minutes.
Remove pan from heat and add cauli rice, pico de gallo and olives to pan. Stir well and set aside.
Wash bell peppers. Cut top off about 1/2 inch below base of stem. Remove seeds and membranes carefully from inside.
Mix half of feta cheese through beef/cauliflower mixture and stuff gently into peppers. Top with remaining feta and place in an oven safe dish.
Cook for 20 to 22 minutes, or until pepper is tender-firm. Remove from pan and serve.
