Mediterranean Smoked Salmon Salad on Grilled Flatbread

Recipe makes 2 Servings

1 large romaine lettuce head, thinly sliced
15 Oz garbanzo beans, rinsed and drained
1/3 cup(s) fresh mint, leaves roughly chopped
1 1/2 Tsp Central Market Organics Whole Mediterranean Oregano
1/3 cup(s) red onion, minced
2 pieces of flatbread, brushed with oil
4 Oz H-E-B Select Ingredients Atlantic Scottish Style Smoked Salmon, sliced thin

Preheat grill to 375ºF.
In a bowl, combine romaine lettuce, garbanzo beans, mint, oregano and red onions together.
Toss with your favorite dressing and allow to marinate. Season salad to taste. Meanwhile grill flatbread 3 to 4 minutes per side until just lightly charred on both sides.
To assemble salad, place each flatbread onto a plate and cover with salad, then add smoked salmon to top of salad.
Chef's Note: A great quick dressing for this salad is to combine 2 cloves of minced garlic with 1/4 cup of red wine vinegar and 1 tablespoon of Dijon mustard. Whisk vigorously and add 3/4 cup of extra virgin olive oil. Season to taste and dress salad.
