Mediterranean Lamb Meatballs with Lemon Tzatziki

2 Lb H-E-B All Natural Ground Lamb
2 large eggs
3 Tbsp parsley, minced
1 Tbsp mint, chopped
2 Tbsp garlic, minced
2 Tbsp fresh basil, chopped
1 Tbsp extra virgin olive oil
1/4 cup(s) water
1 Tsp kosher salt
1 cup(s) Greek yogurt
1 medium lemon, zest and juice
1 Tbsp shallots, minced

Preheat oven to 400°F. In a large bowl, combine lamb, eggs, parsley, mint, garlic, basil, olive oil, water (for moisture) and salt until well mixed.

Roll into golf ball sized meatballs and place in a well oiled baking dish.

Bake for 25 - 30 minutes or until internal temperature meatballs reads 155°F. You can also place them under broiler for 2 - 3 minutes after they are fully cooked to get some extra color on them.

Meanwhile, combine yogurt, lemon juice and zest, and chopped shallots together, then whisk vigorously. Season to taste with salt and pepper and set aside so flavors can meld.

Serve sauce drizzled over meatballs. It's great to serve this in a kaiser or bolillo rolls. Or slice meatballs thin and serve cold on a slice of cucumber for great appetizers or snacks.
