Recipe makes 8 Servings

7 Oz roasted red peppers, drained and thinly sliced
4 Oz Hill Country Fare Canned Mushrooms, drained and sliced
24 Oz H-E-B Marinara Sauce
12 Oz fettuccine
1 medium zucchini, thinly sliced
1 medium Japanese eggplant, thinly sliced
6 Oz H-E-B Fancy Shredded Asagio Cheese

Combine roasted peppers, mushrooms and marinara sauce in a large, microwave-safe bowl, then loosely cover and heat on high in microwave 6 minutes; set aside.
Meanwhile, cook fettuccine according to package directions, but after first 8 minutes of cooking, add zucchini and eggplant; cook pasta mixture 4 minutes more, then drain.
Combine pasta and vegetable mixture with sauce mixture in a large pasta dish or bowl; sprinkle with shredded cheese.
