4 H-E-B Ciabatta Rolls
1 Lb Hill Country Fare Fresh Chicken Tenders
1/8 Tsp H-E-B Black Pepper
1/2 cup(s) Kalamata olives, sliced
2 Roma tomatoes, sliced
1 cup(s) H-E-B Spring Mix
6 Oz Athenos Feta Basil & Tomato Crumbles
1 Tbsp basil, chopped
1 Tbsp H-E-B Peeled Garlic, chopped
1 Tbsp H-E-B Extra Virgin Olive Oil
1 lemon, juiced

Instructions

Prepare ciabatta rolls according to package directions and slice lengthwise for sandwiches. Set aside.

Season the chicken tenders with black pepper and set aside.

Heat charcoal or gas grill to 375°F.

Grill chicken tenders for 2-3 minutes per side until juices run clear. Remove from heat and keep warm in foil.

Place grilled chicken on bottom half of ciabatta roll. Top chicken with sliced olives, tomato slices, spring mix, feta basil and tomato crumbles and top portion of ciabatta roll.

Combine the Mediterranean mix, basil, garlic and extra virgin olive oil in a small serving dish to make Mediterranean Olive Oil Salad.

Serve sandwich with side salad drizzled with lemon juice.
