Meatball Monday Spaghetti with Egg Noodles

Ingredients

Recipe makes 4 Servings

16 Oz H-E-B Fresh Italian Meatballs
16 Oz egg noodles pasta
3 Oz baby spinach, VERY finely chopped
24 Oz Four J Rhode Island Red Pasta Sauce
3 large egg yolks, beaten
2 Oz H-E-B Parmesan Shavings
2 Tbsp olive oil

Instructions

Bring a large pot of water to boil on stove over high heat.

Heat a large skillet over medium high.

Add meatballs to skillet. Sear on all sides until nicely browned, about 8 minutes. Turn heat to low and cover.

Cook noodles according to package directions. Drain, reserving 1 cup cooking liquid from pasta.

Add spinach and sauce to meatball pan. Stir to wilt spinach.

Drain noodles and return to cooking pan.

Add cooking water and eggs yolks. Stir rapidly to coat noodles.

Add noodles to skillet with meatballs in batches to make sure noodles have enough sauce. Save any extra noodles for another use.

Stir and serve with Parmesan shavings and a drizzle of olive oil to garnish.
