4 individual anchovies, oil drained
1 Tbsp Grey Poupon Country Dijon Mustard
1/4 cup(s) lemon juice, plus more to taste if desired
1 large pasteurized egg yolk, yolk only
1/4 cup(s) Parmesan cheese, grated plus more shaved for salad if desired

Combine all ingredients in a wide-mouthed mason jar.

Using an immersion blender, blend until dressing is smooth and creamy.
