6 Gala apples
1 lemon, juiced and zested
4 Tbsp butter
3/4 cup(s) brown sugar
3 Tbsp maple syrup
1 vanilla bean, split, scraped & seeds reserved
1 refrigerated pie crust

Instructions

Peel, halve, and core apples. Set aside half of apples. Cut remaining apples into quarters.

Sprinkle apples with 1/2 of lemon juice to prevent browning.

Melt butter in a 9 inch cast iron or heavy bottom oven safe skillet over medium-high heat.

Decoratively arrange halved apples cut side up in skillet to cover bottom of pan. Add quarters to fill in larger spaces between apple halves.

Combine brown sugar, maple syrup, vanilla bean seeds, and remaining lemon juice and zest.

Add sugar mixture to apples and gently swirl pan to let sugar dissolve.

Reduce heat and cook several minutes to let liquid reduce to a thick syrup.

Meanwhile, roll out pie dough on a floured surface to approximately 10 inches.

Place pie crust over apples, tucking in crust around edges.

Place skillet in a preheated 400˚F oven.

Bake until crust is dark golden brown, about 30 minutes.

Place whole skillet on a wire rack and cool 20 minutes.

Firmly hold a platter over top of skillet and quickly invert the Tarte Tatin onto it. Serve immediately.
