Mango Salad with Habanero Vinaigrette

Recipe makes 4 Servings

2 mangoes, peeled and sliced
1 cup(s) avocado, diced
1/4 cup(s) Cotija cheese, crumbled
1/4 cup(s) pepitas, roasted
1/4 cup(s) green onion, chopped
2 large ears of corn, roasted and kernels removed from cob
1/3 cup(s) Humble House Habanero & Aji Amarillo Sauce
1 Tbsp lime juice
1/3 cup(s) olive oil
1/2 cup(s) cilantro, chopped
1 medium Bibb lettuce, torn or roughly chopped

Place mangoes, avocado, Cotija cheese, pepitas, green onions and roasted corn kernels in a large bowl. Set aside.
In a blender combine Habanero & Aji Amarillo Sauce, lime juice, olive oil and cilantro. Blend until emulsified.
Pour dressing over mango mixture and mix well. Serve over mixed greens or Bibb lettuce.
