6 slices H-E-B Bare Bread Crustless White Bread
8 slices Swiss Cheese
4 Oz H-E-B Mesquite Ham
4 Oz roasted turkey
1 cup(s) H-E-B Pancake Mix, prepared according to package directions, plus more for dredging
1 cup(s) Cap'n Crunch Cereal, coarsely crushed
1 cup(s) vegetable oil, for frying
1 Tbsp powder sugar, sifted
4 Tbsp H-E-B Organics Morello Cherry Preserves

Instructions

To build first sandwich, lay 3 slices of bread in a row. Place cheese, then ham, then a second slice of cheese on first slice of bread. Top with second slice of bread.

Add another slice of cheese followed by turkey, cheese, and third slice of bread. Repeat for second sandwich.

Heat oil in a large skillet on medium-high. Line a plate with paper towels and set aside.

Dredge first sandwich in a small amount of dry pancake mix, dip in prepared pancake mix to coat, then dredge in crushed cereal.

Place fully coated sandwich into hot oil and fry 3 to 4 minutes per side or until well browned.

Transfer to prepared plate to drain.

Coat and fry second sandwich in same process as the first.

Dust sandwiches with powder sugar and serve with preserves.
