12 Oz loquats
1 pie crust
1 Oz .44 oz package sugar-free orange gelatin
8 Oz whipped topping

Instructions

Prepare and bake pie crust according to package directions; set aside.

Drain the loquats and reserve the syrup.

Slice loquats into bite-size pieces; set aside.

Pour 1/2 cup loquat syrup or water into a large microwave-safe bowl and sprinkle with the gelatin; stir to combine.

Microwave gelatin mixture for 45 seconds on high power.

Add 1/2 cup ice cubes to dissolved gelatin and stir until ice dissolves.

Combine the whipped topping and dissolved gelatin in a large mixing bowl and stir well to combine.

Place bowl over a larger bowl of ice and stir gelatin until it begins to thicken (about 3 minutes).

Add sliced loquats and stir to combine.

Immediately, pour mixture into baked pie shell and spread evenly.
